For your main course pick from among Welsh black beef fillet with blue cheese Otley rarebit, red onion marmalade, Carmarthen crisp, fondant potato and baby carrots with a light green peppercorn jus; slow braised rabbit in port and roots, with seared loin of rabbit on rosemary potch and roast leeks; and aromatic couscous stuffed bell peppers with a bean and mint salsa.
